Frugal How-to: Fresh Spinach & Artichoke Dip

Ingredients to make Spinach Artichoke Dip are on sale this week.

For only $1.00 per artichoke, my inner Julia Child thought I should try to make it from fresh ingredients.  (Please make me feel better and tell me I’m not the only person who’s never started with a fresh artichoke before?)

  1. Visuals! I watched this “How to Cook Artichokes” video.
  2. Simple, straight-forward recipe. I like this one from Cooking Light: Spinach and Artichoke Dip Recipe.
  3. Steam the fresh spinach & artichokes (my first time ever… sad.)
  4. Here’s the pre-cooked photo.  I made this last night and refrigerated it overnight so I can bake it tonight.

Obviously using fresh is a little more time consuming, but so worth the effort.  More flavor and fewer preservatives.

  1. This looks SO good! I started searching last night for a fresh spinach/artichoke dip recipe, but everything I saw included canned artichokes and frozen spinach.

    I may have to bring this in as a treat for my co-workers. Thanks for sharing it!

    • Yeah I gave up on finding an actual “fresh” recipe and just used them in this version. I was SO scared of those darn artichokes! Seriously, the first human to ever figure out there is actually something edible in there was a genius. (or maybe just smarter than me… haha)

    • I made it once last year, and it was so much easier than I thought it would be. I think it’s time to make it again. Clint LOVED it. ;)
