Frugal How-to: Quick & Easy Granola

Store-bought granola can be SO expensive (even if you have a coupon!) so I like to make this quick & easy version!  Time investment = about 25 minutes. Although, we recently had another Grand Rapids Bloggers meetup and the girls recommend Good Life Granola as a fantastic (LOCAL!) granola company for those of you with no interest in spending time in your kitchen. ;-)

Quick & Easy Granola:

  • 3 c. rolled oats
  • 1 c. flour (of your choice)
  • 1/3 c. walnuts
  • 1/3 c. sliced almonds
  • 1/3 c. dried cherries
  • 1/4 c. butter
  • 1/2 c. honey
  • 1 teas. vanilla

Combine dry ingredients (oats, flour, nuts, dried fruit) in a large bowl.  Melt butter and add honey and vanilla.  Mix wet and dry ingredients.  Spread loosely on a lightly greased cookie sheet.  Bake 20 minutes at 350 degrees, stirring every 5 minutes.

Frugal Note:  I get my oats from the co-op in 50# bags because it’s less expensive, I use it a lot, and don’t use “instant oats” though they are frequently FREE with coupons.  Honey is really affordable from a local beekeeper in half-gallon quantities.   What is your source for oats, nuts, honey, dried fruit??

Frugal How-to: Fresh Spinach & Artichoke Dip

Ingredients to make Spinach Artichoke Dip are part of the “10/$10, Get 11th FREE” sale at Meijer this week.

For $1.00 ea, my inner Julia Child thought I should try to make it from fresh ingredients and she just wouldn’t shut up!  (Make me feel better and tell me I’m not the only person who’s never started with a fresh artichoke before?)

  1. Visuals! I watched this “How to Cook Artichokes” video.
  2. Simple, straight-forward recipe. I like this one from Cooking Light: Spinach and Artichoke Dip Recipe.
  3. Steam the fresh spinach & artichokes (my first time ever… sad.)
  4. Here’s the pre-cooked photo.  I made this last night and refrigerated overnight so I can bake it tonight…

Moral of the story:  Obviously using fresh is a little more time consuming, but so worth the effort!  More flavor and fewer preservatives!
